I love making a good breakfast on weekend mornings. In my home it is usually just myself, my husband and my daughter, who is one and a picky eater so making a big batch of pancakes can be somewhat wasteful with only 2 1/2 people.
One of my favorite bloggers Joy the Baker has a recipe for a single pancake! Genius! I have tweaked it a little but it is just as good. It is full of oats and a sprinkle (an extra sprinkle if I’m making them) of chocolate chips and even better with a cup of coffee.
Single pancake:
1/3 cup flour
1 tablespoon oats
2 teaspoons sugar
1/2 teaspoon baking power
1/4 teaspoon baking soda
Pinch of salt
1 tablespoon + 2 teaspoons vegetable oil
1/4 cup + 2 tablespoons buttermilk
Dash of vanilla
Handful of chocolate chips
Directions:
In a small bowl mix together dry ingredients. In another bowl mix wet ingredients and combine together. Fold in chocolate chips.
Heat your griddle and cook over medium heat! Flip until golden brown and enjoy!
You can even have some fun with it and add in your favorite toppings! Blueberries, bananas, nuts, or strawberries to top it off!
