Easy Buttermilk Waffles

When I turned 19 I asked my parents for a waffle maker for my birthday. I’m not sure many other 19 year olds were asking for waffle makers but I sure was. I had just started reading food blogs and was obsessed! I started with Joy the Baker and Smitten Kitchen. I still love reading their blogs and using their recipes. Smitten Kitchen has a great cook book, if you need a gift idea! And Joy the Baker just launched a holiday magazine that is at grocery stores.

Well anyway, I started making these waffles at 19 and I always come back to this recipe every time. They are a staple in our house and always a crowd pleaser. My favorite trick with them is to combine the dry ingredients and then store it in the pantry. When you have company over you can easily whisk in the wet ingredients and you have an easy breakfast ready. I also freeze cooked batches to pull out for an easy morning breakfast! With the holiday approaching it is the perfect time to stash a batch of mix or two in your pantry and break it out Christmas morning!

Also, I have always used my Calphalon Waffle Maker. It is amazing but unfortunately it looks like this model isn’t made anymore. If mine ever gives out on me I will purchase this Calphalon. I know they are faithful and durable because the one I use now is the one I got when I was 19. It has been from Arizona to New York, back to Arizona, to Tennessee and now to Indiana. The thing has held up perfectly for 11 years! The pictured waffle maker is a fun and festive waffle maker from Target. I like to use these with my daughter to make the holiday fun! They make the cutest little waffles and for some reason kids eat more when it is fun!

Buttermilk Waffle Recipe
Ingredients:
2 cups all purpose flour
1/2 teaspoon salt
2 tablespoons sugar
1 3/4 cup buttermilk
4 tablespoons melted butter
2 eggs
1/2 teaspoon vanilla extract

Directions:
Melt your butter first so it has time to cool

Combine all dry ingredients together.

Mix together the buttermilk and eggs. I like to use a large glass (4 cup) measuring cup

Mix buttermilk mixture and dry mixture together

Stir in melted butter and vanilla

Spray your waffle maker (mine never needs to be sprayed but just incase yours does)

Spread about a laddle full of battle into your waffle maker and set to your cooked preference.

Serve immediately, and it is always great with a dusting of powdered sugar and warm syrup!
