Eat Salsa, Be Happy

Happy Friday!! We have made it through another week! Be proud of yourself and take a deep breath to enjoy the weekend!

Friday’s call for chips and salsa! Personally I think every day calls for chips and salsa considering I could eat it everyday of my whole life and not get tired of it!I really think salsa runs through my veins. There are just so many different types of salsa that it’s too hard to resist. Sweet, spicy, mild, medium, chunky, roasted…I don’t think I need to go on so let’s just say there are so many to choose from!

Making salsa is one of my favorite things to make. It is so versatile that you can make it and use it as an appetizer, serve it with your main dish or just have in your fridge for a healthy snack. It’s also the best thing to take to a party or give as a gift!

There is only one rule to follow when you’re making salsa. Never, I repeat, never touch your eyes or nose after cutting the jalepeno. The jalepeno makes the salsa incredible but will ruin your day if you make the mistake of touching your eyes. I’ll be the first to admit I haven’t taken this advice and have paid the price!

If you have a food processor or a blender you’re in good shape to make this salsa. I am mildly obsessed with my food processor so I favor using it over a blender, but a blender works fine too! If you’re making it in a blender I would possibly recommend making it in smaller batches. Either way will get you the salsa and that’s all we’re worried about on a Friday.

So, after work today swing by the grocery store, get yourself these ingredients and follow the simple directions to end your week on a happy note!

Ingredients:

1 can of fire roasted tomatoes

1 can of original rotel

1/4 onion

2 clove garlic

1/2-1 jalapeño (depending on how hot you like it)

Large handful of cilantro

1 teaspoon salt

1/4 teaspoon sugar

1/4 teaspoon cumin

Juice of 1 lime

Directions to happiness: 

Add fire roasted tomatoes and rotel into food processor.

Rough chop onion, garlic and jalepeno.

Add cilantro, salt, cumin, sugar and juice of a lime.

Pulse food processor until chopped and combined!
